We sautéed up up some Italian sausage to later combine with some fresh ricotta cheese for a delicious filling.
Mixed 2 parts flour, 1 part semolina flour and 2 eggs for the pasta dough and put through the pasta machine.
Nick cutting 1 x 1 inch squares.
filling of choice -- we used ricotta and minced sausage.
Fold in a triangle gently squeezing out air and pressing down sides.
Perfecting the tortellini craft. Fold, wrap, press.

Finishing touches. We added pesto, sun dried tomatos, pine nuts and freshly grated parm and with the extra filling we made bruschetta for the side! Add in a bottle of wine and we are set for dinner. Delizioso!
