Delicious Red Quinoa Burger Recipe

I've been craving a red quinoa burger since we've left California (The Riders Club Cafe, you've left your mark!) so I decided tonight on my way home from yoga it was time to replicate my dearly missed vegetarian burger. If you haven't tried one yet I highly recommend them. They are a delicious healhty alternative to a beef burger and easy to make!

What you need:

1 cup uncooked red quinoa
2 cups water
2 green onions (including white part) - chopped
1 shredded carrot
2 eggs
1/4 cup breadcrumbs
1/8 tsp cumin
1/8 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
a few teaspoons of oil (I used coconut oil and would definitely recommend it)


What you do:

1. In a small sauce pan, heat 2 cups of water and a pinch of salt on high heat. When water boils, add 1 c. quinoa and bring back to boil. Lower heat to low, cover and simmer for 16-20 minutes, or until water is gone and quinoa is soft. Allow quinoa to cool for 10-15 minutes.

2. In a mixing bowl mix together cooled quinoa, green onions, carrot, breadcrumbs, cumin, garlic powder, salt and pepper. Whisk eggs and add to mixture. If the mixture is too moist you can always add more breadcrumbs. You won't get a burger like consistency, trust the cooking process.

3. Heat oil in skillet on medium/high heat, then lower to medium heat. Take a scoop of quinoa mixture and add to skillet. Pat down with spatula in pan to make a 1/2 in. patty. Cook 4-5 minutes per side.

4. Toast some fresh bread, add cooked quinoa burger and some baby spinach and you have yourself a delicious meal. I cooked two and wrapped up about 6 other patties and put them in the freezer for some future yummy quick meals.

Unfortunately I don't have pictures at the moment as this was all prepared later at night after yoga and my ravenous stomach had a one track mind! Pictures will be added in the future.

Update: 

So we were at my friends apartment the other week and decided to make quinoa burgers. We meant to pick up pitas to slide them into but totally forgot! What happened next was fate.

We grabbed some romaine lettuce to serve as our bun. Mixed some ketchup and mayo together and spread it on top of the quinoa burger, topped it off with some crushed pineapple she had in her fridge and some fresh cut avocado and voila, a light freshing version of the quinoa burger was born.

AND, I would prefer it this way again! This meal just gets better and better!
