Breakfast Potato Bowl


Breakfast, ah beautiful nourishing breakfast. One of my three favorite meals. Crispy potatoes sweetly sauteed with onion completed with melted cheese.... Sigh, I'm getting hungry even thinking about it. If you love breakfast, get out the skillet and break an egg, here is a tasty treat of a recipe for you.

Ingredients: (Serves 2)

6 small red potatoes - cubed (skins on)
1/2 an onion - chopped
olive oil
flat parsley, or herb of choice
cheddar cheese grated or cheese of choice (I had Gorgonzola on hand so I added it as well)
2 eggs
1 avocado 
bacon optional


Directions:
Put burner on medium - medium/high heat, coat bottom of skillet with olive oil. When skillet is hot, add potatoes with salt and pepper. Brown and lower heat. When potatoes are fork tender add the onions keeping the temp low to caramelize the onions. 

Put 4 slices of bacon into another skillet, cooking them to desired crispiness.

Turn Oven on to 350 degrees

Layer potato mixture with cheese and crumbled bacon into oven safe dishes. Add herb of choice or green onions. Put dishes in the oven (keep an eye on them and take out when cheese melts).  Slice or cube your avocado.

Meanwhile, heat up the skillet again, add some more olive oil and cook an egg to your liking.

Lay the avocado on top of your potato bowls, crown your dish with your egg and a few drops of Sriracha and it's eating time!
