Have a Sandwich

Decided to make a up some stuffed chicken breast sandwiches. With bacon, Cheddar cheese, caramelized onions and chicken on a roll its hard to go wrong.

First I threw some bacon in the pan while I cut up apples and tossed them in a bowl with Yukon Jack, turbinado and a pinch of cinnamon. Then while the bacon was cooking the onions went in the pan with more Yukon Jack and olive oil to caramelize.
When the bacon was half cooked I removed it and wrapped the chicken breast around the tasty apples then wrapped that in bacon. Pinned it all together with toothpicks and threw it all in a cast iron pan in the oven.

Once cooked buttered up a ciabatta roll and melted some black diamond extra sharp cheddar cheese on it, placed the chicken wrap then covered it in caramelized onions. Dang good food.
